Harvest vegetable rye melt, with pan fried au gratin patties

Okay so, a really long title, I know. But this is really good, and I made it with random stuff in my fridge, and it actually looked good, so I decided to share. I'm a bachelor in an apartment, so I'm not exactly running Emeril's kitchen here. Trust me if I can cook  this, so can you.

The Melt:

Stuff I used:
Rye bread squares. Or any small bread works.
Deli-sliced chicken (it's really thin)
Colby Jack and Provolone cheese
Zucchini, shredded
Yellow Squash, shredded
Carrot, shredded
Red and Green Bell Pepper, but you can use any kind.
Grape Tomatoes, quartered
Vidalia Onion, chopped small
Baby Bella mushrooms, chopped
Garlic, minced
Jalapeño, chopped small
1/2 lime, to squeeze
Black pepper
Olive oil

What to do!
Preheat your oven to about 450. Spread out your bread slices in a baking pan. In a bowl mix the olive oil, garlic, jalapeno, lime, and some pepper. Spread this mixture on top of the bread slices. Put the provolone cheese down next. Continue building with the rest of the ingredients, and leave the colby jack for last, on the top. See how easy? Obviously you can substitute any number of things for what's in your fridge. Now bake it all in the oven until the cheese is melted. Mmm... cheese.

 

The Au Gratin:

It's actually easier than you think, especially because I cheated. I had already bought one of those supermarket just-add-water boxes of instant au gratin goodness. I made it, and it was sitting in my fridge as a leftover. When I made it, I also happened to throw in some cheddar cheese, pre-cooked corn, and carrots. So here it was sitting in my fridge, looking kind of lonely.

I threw it in a bowl, microwaved it for 1 minute, and mashed it up a bit for texture (but not too much). Then I took it out in clumps, and formed it into patties. Then I flipped each side of the patties in pan searing flour. Why does a bachelor have this fancy flour, you ask? Because it makes frying things in a pan really, really easy.

Anyways, heat up some pure olive oil in a pan, on your stove. If you want to burn your kitchen down, use extra virgin olive oil (as in, don't). It took me forever to figure this out. Then, drop in your patties a few at a time. Don't let them burn -- don't be afraid to check their bottoms. Flip them when they're golden brown, and brown both sides. The oil will definitely sizzle and crackle, but it's fine. If the oil is really popping, turn your heat down. When they're done, take them out onto a paper plate (or if you're not a bachelor, onto a real plate). Done!

To finish the whole thing off and offset the incredible amount of cheese you're about to eat, throw the patties on a salad. I used my extra veggies in a spring mix salad. I love that stuff because I can buy it from the store already washed for me.
